Garlic Coconut Oil Roasted Carrots & Potatoes

Make the perfect side dish to any meal with this recipe! We blended carrots and potatoes and deliciously seasoned it with our Garlic infused Coconut Oil, salt and pepper. This zippy dish is great served warm, chilled, or at room temperature.
- ¼ NUCO Garlic Coconut Oil
- 2 lbs. assorted small potatoes, halved
- 2 lbs. chopped carrots
- ¼ cup parsley
- 3 tablespoon fresh lemon juice
- Preheat oven to 375 degrees F.
- Mix halved potatoes and carrots onto large saucepan and drizzle both NUCO garlic coconut oil and NUCO original coconut oil
- Toss parsley and lemon with mixture and cook in oven for 10 to 15 minutes.
