Ingredients: Makes Two (2) Servings

  • 2 NUCO Organic & Non-Gmo Coconut Wrap – Turmeric Flavor
  • 1 Cup Quinoa, Cooked
  • 1/2 Cup Basil Pesto Hummus Spread
  • 1/2 Cup Spinach, Chopped
  • 1/2 Sun-Dried Tomatoes, Chopped
  • 1/2 Cup Shredded Carrots

#CookWithNUCO Directions:

  1. Add 1 Cup of Quinoa to two (2) cups of water and bring mixture to a boil.
  2. Reduce heat and let simmer for 15 – 20 minutes.
  3. Slather Coconut Wraps evenly with Hummus Spread.
  4. Pour Cooked Quinoa evenly over your Coconut Wraps.
  5. Add Chopped Spinach, Shredded Carrots, and Chopped Sun-Dried Tomatoes.
  6. Carefully Roll or Pinch ends (like a taco) and Enjoy!

    Have been a consistent buyer of the wraps at Amazon. Have been unhappy lately as the wraps are dry and they crumple quickly.
